So I downloaded and opened photorec as the tutorial said, but my disk shown in it is much more smaller than it really is (256GB to 524MB),

The only alternative is to learn the file system structure, write your own recovery software.

It is a tricky issue. EML looks to me like a single raw email. EMLX (contained in PhotoRec) is different from EML.
If you don't have any email software installed that is using mbox as a storage format, checking mbox might produce EML files.

Check the Microsoft website. I don't use Bitlocker and you have to find it out for yourself - I don't know more than you.

As I don't know how an Bitlocker encrypted partition appears in TestDisk or if it appears at all, you should duplicate the disk using ddrescue as described in the manual.
Afterwards you would completely decrypt the partition using your password.

I am a software engineer but haven't messed with drive internals for years.
