I've got a bunch of approximately 900 GB of MOV/MP4/M2TS recovered files from an external USB 1 TB hard drive, and they are from many different events.
I need to sort them by date/time, so it can be easier to rebuild my whole work.

Sure! If R-Studio did that, PhotoRec will do as well.
If not accustomed to command line (DOS) screens, try "qphotorec_win.exe". Run as administrator (right button).
Select the source drive, and provide a different destination, with enough space.
Select "Whole disk" and then "Search".

Did you try an external repair tool?
I have done this a couple of times with success.
After recovering .mov files with PhotoRec, they did not play at all. Applying a fix (e.g. videorepair), they worked well.
