Your HDD is physically damaged. You can try to clone it to a new empty disk using ddrescue as described in https://www.cgsecurity.org/testdisk.pdf
Once it's done, remove the original disk and try to access your data from the clone.
If it doesn't work, contact a data recovery company.

ecryptfs is a file level encryption system, it can be used on top of LUKS.

Please copy and paste the testdisk.log file content.
If TestDisk find your 2 partitions, I don't see where the problem is.

Looks like a corrupted Windows installation. Boot from Windows cd/dvd and choose Repair Installation.
Do not try to restore to a previous state, you have already tried it without success...

Enable SMART monitoring in your BIOS setup.
It may help your disk to use spare sectors to replace damaged one.
If rewriting the partition still doesn't work, clone your disk to a new empty one (can be bigger) using ddrescue, read https://www.cgsecurity.org/testdisk.pdf for an howto.
