I've undeleted my data, but formats are irrelevant :(

Sadly I deleted my business files permanently on my MacBook (Mojave 10.14.6) by accident. It was a bit of shock, but I didn't over-wright anything to my disk and then I used photorec to undelete my files.
I knew that I was unable to have my file names back by doing this, and I have saved nearly the amount of data that I have lost, but I didn't expect to have them in different file formats. I have had '.wav' files, folders etc. but now I have '.exe' files or property lists...

Is there a way to sum up these fragmented files? Frankly, I don't even know how to name this situation. I did research extensively but I couldn't find a proper solution to this or maybe I am missing sth idk. Any bit of help would be appreciated.
