Recover partitions that spans 2 drives

I have a CentOS 5 32-bit host with ext3 partitions on 2 hard drives. I removed the partitions on both drives. If memory serves, one of the partitions spans both drives. How should I proceed assuming one of the partitions spans over to the 2nd drive? Should I just run the normal recovery process on one drive then the other?
