brief history...
i have a couple of WD Purple disks connected to a Synology unit via USB. these are not set up as raid. they are external to the Synology unit.
a video DVR ftp's security cam *.jpg's and *.dav's files to these drives.
i deleted some directories awhile back via commandline within shell into Synology. Synology recycle bin doesn't list them.

i have them now connected to my laptop and both testdisk and photorec see the drives and can access them.
photorec is now recovering ALL *.jpg files from one of the drives. lists it will take 668hours.
is there an option within photorec to find/list deleted directories so i can recover files from a directory versus the whole partion/disk?

No. Read the manual and all sources of online documentation.
