iPhone recovery - no images

I had a situation that forced me to restore my iPhone 5s (iOS 8), so I followed the instructions to make a disk image and then ran photorec, hoping to recover about 50-100 photos that weren't backed up.

When I ran photorec on the 16Gb iphone.img file no jpegs were found.

Is the issue that the data is encrypted? Can someone advise a tool to decrypt. Did I have some settings wrong perhaps?

Further to my question above. When trying to recover files from an iPhone disk image what file system do I choose e.g. Ext2/ext3 etc, FAT
