I accidentally uninstalled MAMP which contained the htdocs folders including all projects I am currently working on. Unfortunately my latest back up is from February.
The actual location of this folder was: Users/[username]/Applications/MAMP/htdocs/
Is there anyway of recovering, looking for this specific location?

Unfortunately TestDisk doesn't know how to undelete files from HFS+.
You can still use PhotoRec, it will recover both deleted and non-deleted files but it's better than nothing. Be careful to store the recovered files on another partition (or disk).
