kann mir jemand sagen, ob die TestDisk is OpenSource software
einen von mir dummerweise gelöschten Ordner - Dateiformat PAGES - wiederherstellen kann?

TestDisk and PhotoRec are opensource.
As MAC OS X is using HFS+ filesystem, testdisk can not undelete them.
It still possible to use PhotoRec to recover the files but it will recover both deleted and non-deleted files.
You will have to use another partition (or disk) to store the files.
