This is also the main drive on my Mac.
The story: I'm looking to recover a bunch of Sketch and Keynote files that were deleted by Dropbox when a partner Permanently Deleted the folder (he was the owner of that). I see from the list of files .sketch is supported. I've tried with two other solutions DiskDrill and EaseUs - both are seeing the sketch files but the files seem to be corrupted.
PhotoRec is my last try before giving up .
Can PhotoRec recover files from APFS Encrypted drive?

APFS encrypts data at the file level, not at the disk level , so I don't think if it's possible...
