I am running testdisk to try and restore the 2 partitions accidently removed by parted (parted -s /dev/sdc mklabel msdos). The device /dev/sdc is 2TB in size, and at 86% complete on the analyze, I am seeing the following:
Disk /dev/sdc - 2147 GB / 2000 GiB - CHS 261083 255 63
Analyse cylinder 226600/261082: 86%
Linux 134458 13 20 266305 36 35 2118123520
Linux 161106 69 52 292953 93 4 2118123520
Linux 161111 62 40 292958 85 55 2118123520
Linux 161116 22 59 292963 46 11 2118123520
Linux 161117 223 3 292964 246 18 2118123520
Linux 161119 103 9 292966 126 24 2118123520
check_FAT: can't read FAT boot sector
Invalid FAT boot sector

FAT32 431952 149 36 544503 59 43 1808126153

The device belongs to a volume group with several other devices.
sdc 8:32 0 2T 0 disk
├─vgETL-etlp 252:6 0 12.9T 0 lvm /etl_processing
└─vgETL-infl 252:5 0 1010G 0 lvm /incoming_files

Am I understanding this correctly that sdc consists of 6 * 2TB partitions? and all of these should be restored upon completion of the analyze?

Obviously not. Partitions may not overlapp. Please post your log file and read the documentation:
